Dry, Medium hard. Texture is like smooth Nakumat, no grit and doesn’t sticks.
Roasted kaolin is well pronounced first, Smell of old building when wet. It has tangy cementy tones at the end. Strong cementy smoky.

A fairly hard variety. Breaks down into a nice cream, but wasn't at all my jam. To me, it had a sour basement floor flavor, which was off-putting.
